Pro tip for next time
Extend your bulk fermentation. Instead of watching the clock, wait for a 30-50% increase in dough volume and a light, jiggly texture before shaping.

Do this
Move the dough to a straight-sided container so you can measure the rise, and mark the starting level. Three sets of stretch and folds: the first after 30 minutes, then two more 45 minutes apart. Leave it alone after the last fold. End bulk on the rise and the feel, not the clock.

Try it: pause the timer, add time, or mark the fold done.

Questions
Good to know.
What is SourdoughGuru?
SourdoughGuru is a sourdough baking app for iPhone and Android. It plans your bake backwards from the time you want bread, guides you through every step with timers, keeps your recipes, starter and bake logs in one place, and uses AI to analyse the crumb of your loaf.
How does the AI crumb analysis work?
Take a photo of your sliced loaf. SourdoughGuru marks problem areas such as tunneling, names the crumb structure it detects (for example a fool's crumb from under-fermentation) and gives a tip on what to change next bake.
Can it plan a bake around when I want my bread ready?
Yes. Pick the day and time you want fresh bread and SourdoughGuru works backwards, scheduling the levain build, autolyse, mix, bulk fermentation and the rest so the loaf is ready on time. Step timings are adjusted to your kitchen's temperature.
Can I use baker's percentages or grams?
Both. Every recipe can be shown as baker's percentages or as grams and scaled to any batch size. The flour and water inside your levain are shown separately, so nothing is counted twice.
Does it help me look after my sourdough starter?
Yes. Log every feed, get feeding reminders, and see a health check and a feeding chart for each starter.
Can I share my loaf or recipe?
Yes. Share a loaf card with your photo, hydration and recipe, or a recipe link. Anyone who taps it can open the recipe planned and ready in the app, and you can stop sharing at any time.
Is SourdoughGuru free?
SourdoughGuru is free to download on the App Store and Google Play. Some features are part of an optional Premium subscription, which is billed through the app store.
Is there a free sourdough calculator?
Yes. The website has two free tools: a sourdough and levain calculator that turns baker's percentages into gram weights, and a reverse calculator that turns a recipe's weights into baker's percentages.
